So, this happened. Pere Jaques is a belgian ale brewed by my hometown brewery Goose Island. This is bottle conditioned, which means yeast is added to the beer after it’s initial boil so that it develops and changes in the bottle. Pere Jaques is a fruity, light belgian with a malt aftertaste. As the years progress, it loses that fruity belgian yeast taste and becomes straight up malt. That’s not necessarily bad or good. It just is. It was fun to share these with friends and discuss the changes that took place. More verticals to come!
